What’s in your
cast iron?

After dinner

Keep the pan ready

Wash. Dry. Oil. Done.

The three-minute reset

  1. Wash. Warm water, a brush or scraper, and a little soap when you need it.
  2. Dry. Put the pan over low heat until every trace of water is gone.
  3. Oil. Wipe on a very thin coat, then wipe again as if you changed your mind.

Seasoning is polymerized oil, not a museum finish. Cooking maintains it. If the surface gets sticky, you used too much oil. If rust appears, scrub it away, dry the pan, and reseason.
